Here’s a dish that is soooo beautiful! Maybe it shouldn’t matter, but when I eat, I want the food to look gorgeous! So, Jim is most excellent at making this happen! One of the beauties is his cauliflower medley. It’s actually easy to make…shhhh…Don’t tell your friends! They’ll be stunned at this dish! And you’ll be the talk! The trick is to buy your veggies right!! As Jim puts it, “It’s all in the shopping!” Be sure to check out Grocery Shopping with Red Fox and Chef for some ideas! But the deal is, you want fresh as you can get, organic when possible (more nutrients!!) and as colorful as you can get! The more color, the more flavor and nutrition! That’s key! Look for color! With Cauliflower, you can get that! I wa brought up on the standard white..blah! How boring! How conventional! LOL (I’m so spoiled now!!) There are beautiful cauliflowers out there, Orange, Green, Purple (my fav!) so go ahead and mix it up! You’ll find that they are way more “fancy” and full of flavor! I’v also learned to NEVER BOIL!!! Who knew?
Italian Cauliflower Medley
- 1/2 head Purple Cauliflower
- 1/2 head Orange Cauliflower
- 1/4 Head Green Cauliflower
- 1/4 head Broccoli
- 1/2 Red Onion – sliced
- 5-6 Red and Yellow Baby Peppers
- 1 pkg Italian seasoning dressing mix dry
- Sea Salt and Pepper to taste (doesn’t really need any!)
- Olive Oil
- 2 Tbs water
Cut all veggies up in big bites, toss in a large bowl with Olive Oil and Seasonings, sautee in large wok or pan until tender (about 10 min) stirring often!
